Piadina Verdure: grilled peppers, aubergine, rocket and mozzarella

Preparation

  1. Heat a grill pan.
  2. Cut the aubergine into thin slices and brush with some Bertolli extra virgin olive oil.
  3. Grill on both sides until you see nice grill marks. Leave to cool on a plate.
  4. Heat the piadina according to the instructions on the packet.
  5. Cut the mozzarella into slices. Drain the grilled peppers.
  6. Grab a good handful of rocket and cover 1 half of the piadina with this and top it with a few slices of mozzarella.
  7. Season the mozzarella with salt and pepper, some grilled peppers, aubergine and pesto to taste.
  8. Fold the piadina and cut it in half. Buon apetito!

  • Bertolli Pesto alla Genovese
  • 1 jar Bertolli Peperoni – Grilled peppers
  • 2 balls of Mozzarella
  • Salt & pepper
  • ½ aubergine
  • Rocket
