Piadina Verdure: grilled peppers, aubergine, rocket and mozzarella

Preparation
- Heat a grill pan.
- Cut the aubergine into thin slices and brush with some Bertolli extra virgin olive oil.
- Grill on both sides until you see nice grill marks. Leave to cool on a plate.
- Heat the piadina according to the instructions on the packet.
- Cut the mozzarella into slices. Drain the grilled peppers.
- Grab a good handful of rocket and cover 1 half of the piadina with this and top it with a few slices of mozzarella.
- Season the mozzarella with salt and pepper, some grilled peppers, aubergine and pesto to taste.
- Fold the piadina and cut it in half. Buon apetito!

- 1 jar Bertolli Peperoni – Grilled peppers
- 2 balls of Mozzarella
- Salt & pepper
- ½ aubergine
